Quinoa, Kale and Tomato Salad

Makes 4 servings

  • 8 oz of cherry or grape tomatoes
  • Olive oil 1 tbsp
  • Salt to taste
  • Pepper to taste
  • 1 cup dry quinoa
  • 2 cup water
  • Kale 2 cups chopped
  • Juice from 1 lemon
  • 1/2 cup chopped cilantro
  • 1 medium onion

Chop kale & toss with juice of 1 lemon or lime, thoroughly coat to start process of breaking down kale.
Rinse and strain 1 cup of dry quinoa (to remove coating)
Put quinoa into pot with 2 cups of water per 1 cup of quinoa
Let quinoa come to a boil
Turn heat down to simmer & cover
Let cook for 15-20 minutes or until all visible water is gone
While quinoa is cooking,
In a bowl mix kale with lemon juice, one medium chopped onion, tomatoes, pepper, salt, and cilantro. When quinoa is ready, let it cool down and mix it in with the rest of the ingredients.
